I. What is nutritional yeast?

 Nutritional yeast is a type of yeast called Saccharomyces cerevisiae.  They are also the yeast used for baking bread and brewing beer.

While yeast, bakery yeast and nutritional yeast are made from the same yeast, their products are different.

- Yeast: Baking yeast is purchased raw and used to make bread.  Yeast dies during cooking but adds flavor to the bread
- Brewer's yeast: Beer yeast can be purchased raw and used to brew beer.  Dead yeast cells left over from the brewing process can be consumed as a nutritional supplement (but taste very bitter).
- Nutritional yeast: This yeast is used in food.  Yeast cells are killed during production and are no longer present in the final product.  It is used in cooking and has an acrid or savory flavor.
 To produce nutritional yeast, S. cerevisiae cells are grown for several days on a sugar-rich medium such as molasses.  There are two types of nutritional yeast - fortified and non-fortified.

- Non-fortified: This type does not contain any additional vitamins or minerals.  It contains only vitamins and minerals that are naturally produced by yeast cells as they grow.
- Fortified: This type contains multivitamins that are added during production to increase the nutrient content.

 The amount of vitamin B12 depends on the brand of production.  With the Bob Red Mill label I'm using, the amount of vitamin B12 is 7.2 micrograms (3 times the amount of B12 a person needs in the day)

1. Rich in nutrients

 Nutritional yeast is an excellent source of protein, B vitamins and trace minerals.  Some of the main nutritional benefits of nutritional yeast include:

- As a complete protein: Nutritional yeast contains all nine essential amino acids that the body cannot synthesize.  One tablespoon contains 2 grams of protein.  This type of food is very suitable for vegetarians to add high quality protein through the diet.
- Contains B vitamins: One tablespoon of nutritional yeast contains 30 to 180 percent of the recommended daily intake of B vitamins.  For the fortified, vitamin-fortified yeast, it's particularly rich in thiamine, riboflavin, niacin, vitamin B6, and vitamin B12.
- It contains trace minerals: One tablespoon contains 2 - 30% of the daily intake of trace minerals, such as zinc, selenium, manganese and molybdenum.  These minerals are involved in gene regulation, metabolism, growth, and immunity.

2. Prevent vitamin B12 deficiency in vegetarians

 Vitamin B12 is needed for a healthy nervous system, DNA production, energy metabolism, and the creation of red blood cells.  Vitamin B12 is only found naturally in animal products, so vegetarians often experience a deficiency of this important vitamin.  Consuming nutritional yeast can be an effective way to prevent vitamin B12 deficiency while on a vegan diet.

One study including 49 vegetarians found that consuming 1 tablespoon of fortified tamarind daily restored vitamin B12 levels in people with a deficiency.  In this study, nutritional yeast contained 5 mcg of vitamin B12 per tablespoon - more than double the recommended daily intake for adults.

 Vegetarians should look for fortified nutritional yeast to ensure there's enough B12 in the product.

3. Contains powerful antioxidants

4. Lower cholesterol levels

 The beta-glucans found in nutritional yeast have the ability to lower cholesterol.  In one study, men with high cholesterol who consumed 15 grams of yeast-derived beta-glucan daily for 8 weeks experienced a decrease in total cholesterol levels by 6%.  Another study found that rats given beta-glucan from yeast had significantly lower cholesterol levels after just 10 days.

Beta-glucan is also found in other foods, such as oats and seaweeds.

 Although the chemical structure of beta-glucan in oats is slightly different from that of the yeast beta-glucans, data show that they have similar cholesterol-lowering effects.  However, there are no studies currently available that test whether or not consuming nutritional yeast has the same effect.
