Lindesnes is located at the southernmost point of the Norwegian coast, near its famous lighthouse. Going downstairs to the restaurant, you will be impressed by the elegance and simplicity of its construction.
Success in research and raising environmental awareness
Marine species thrive in both sea and brackish water – green to create natural abundance in visual biodiversity. The restaurant will soon welcome interdisciplinary research teams to study marine and fish behavior, through cameras and other measuring tools installed on and off the front of the restaurant.
Researchers from the Norwegian Institute of Bioeconomic Research (NIBIO) and other research centers seek to understand how wild fish can react to sound signals and study the behavior of fish in during the changing season. Researchers will also help create optimum seabed conditions for fish and shellfish to thrive near the restaurant.
The restaurant has a capacity of 35-40 guests dinner each night, in the dining room protected by concrete walls half a meter (or nearly 6 feet) thick. Its culinary focus, created by the young Danish chef Nicolai Ellitsgaard, in his parlance, to create a great culinary experience based on locally sourced products, especially hit strongly in capturing sustainable wildlife, he carried a team of 16 international cookers.
“Under is a natural progression of our experimentation with boundaries. As the new landmark for Southern Norway, it challenges a person’s physical placement in his or her environment. In this building, you are underwater, over the seabed, between land and sea. The Under experience offers new perspectives of seeing the underworld, both beyond and beneath the waterline,” says Snøhetta Founder and Architect, Kjetil Trædal Thorsen.
By focusing on the elusive existence of life on land and at sea, Under may be the first to propose a unique understanding of the nuances of human contact with the marine environment.
